Want a dessert that’s not too sweet? Look no further than raspberry fudge, a classic British dessert with an airy texture and light sweetness that comes from the fresh fruit. It’s perfect for summer when the berries are at their best and only a few are required zhuzh to shine.
To make a traditional berry smoothie, fresh or frozen berries, such as strawberries, cranberries, or blackberries, are cooked with sugar and some water until soft and syrupy. You just heat the berries until they start to burst. After cooling, this mixture is folded into custard or, in our case, into whipped cream. This version turns it up a notch with the addition of Greek yogurt, which adds bright flavor. Finally, top with toasted coconut for crunch.
